Georgia McDermott expresses the fears of many gluten intolerant people in her introduction to this book: “A life of bland, boring food seems to be the foregone conclusion when considering a life without onion, garlic and wheat” – but don’t give up yet – hope is in hand as she continues – “but after nearly a decade of dealing with my own food intolerances and digestive illness, I want you to know that this is not the case.”

Over seven years of research has led McDermott to this point, and the recipes here are all gluten free, FODMAP friendly and more. I’ve mentioned in another review how my own journey to learn more about gluten-free baking alternatives has been over a decade long already, and confirmed that back then options and information were far less readily available than they are today.

McDermott does a deep dive into her Gluten Free pantry, explaining the advantages and benefits of different flours, starches, gums and other staples for a GF diet, and then the fun begins: waffles, pancakes, croissants, pain au chocolat, custard danishes, profiteroles, eclairs, cheesecakes, tarts, cookies, brownies, scrolls, pies, Yorkshire pudding and an epic exploration of sourdough, followed by noodles, dumplings and more – this is manna from the heavens for people with gluten and FODMAP related issues, many of whom thought they may never be able to eat this sort of thing again.
