Is this a cookbook? Well, it walks the walk and talks the talk, so I’m saying, “yes – yes it is”.

It’s also more than that. Alongside the many recipes there are thoughts and anecdotes and insights, all direct from Heston’s quirky, left of centre, food brain, and many of them are pure genius, very ‘out of the box’ and worth breaking lifelong habits for.

Take, for instance, making a toasted sandwich but only toasting one of the pieces of bread, thus adding another level of complexity texture-wise. How about a cheese toastie, with kimchee? Yes – a Kimcheese toastie! Chilli con carne with spiced chocolate, like a Mexican mole sauce. There’s even a Hemp panna cotta, (R)ice Cream (This is rice and rice Krispies turned into ice cream, believe it or not!), and Cricket Biscuits (made with real cricket powder).

There’s also plenty of standards – done the Heston way, of course – from perfect roast potatoes (“crispy and crunchy on the outside; soft and fluffy on the inside”) to Pasta Puttanesca, Tarte Tatin to Fish Cakes with Tartare Sauce.

Every recipe is easy to follow, and adorned with interesting tidbits and tips, explanations and educational guidance, making it as much for the experienced cook (or chef – this is a good way to get our professional brains thinking in a different way) as it is for the beginner looking to understand some basics in fun ways which work.
