At the risk of sounding over-privileged, when one gets a lot of cookbooks come through for review, most of them tend to blur into a bland, generic mid-range where inspiration and innovation rarely visits.
So it’s a rare delight to receive a volume such as Marit Hovland’s wonderful Bakeland. Norwegian Hovland is not a professional cook nor pastry chef, but she explains gleefully in her introduction that she has enjoyed baking from a young age, and found her own methods to fully express her love of Scandinavian nature through her baking.
With an enviable simplicity she details how to create edible treats which are inspired by or modelled on leaves, flowers, bark, and even stones and shells. The result is breathtaking, revelatory and inspirational – and easy to follow and replicate.
